  Vidalia Onion Pie 3 ways

Ingredients                                         
2 cups ritz cracker crumbs

6 tbsp butter

3 cups thinly sliced vidalia onions

2 eggs

3/4 cup milk

1/2 tsp salt

couple dashes pepper

1/2 cup sharp cheese

Paprika

 

Directions

Make Ritz cracker crumbs,  use a ziplock back and rolling pin or ninja,

or food processor to make ritz crumbs and add melted butter,

mixing well and pouring in an 8 in. pie plate.

Press mixture into an 8-inch pie plate.

Saute onions with 2 T butter until clear, translucent, tender, sweet and pour on crust.

Beat eggs with milk, salt, and pepper and pour over onions.

Sprinkle with cheese and paprika.

Bake at 350 degrees  for 45 minutes or until firm in the center.

 

Ingredients 2

                        

6 Vidalia onions, thinly sliced

4 eggs, beaten

1 cup sour cream

salt and pepper to taste

1/2 cup unsalted butter

1/4 cup grated Parmesan cheese

1 pinch paprika

2 tablespoons hot sauce

2 (9 inch) pie shells, baked

1/2 cup grated Parmesan cheese for topping

 

Directions

Preheat oven to 375 degrees

In a medium skillet, cook onions in butter for about 10 minutes, or until clear and soft; stir often. Reserve juices.

In a large bowl, mix onions with eggs and sour cream. Stir in onion juices, butter and cheese. Add salt and pepper and hot sauce to taste. Make sure all ingredients are well blended and then pour into the 2 pie shells homemade or store bought.

Sprinkle grated cheese and paprika on top of pies. Bake at 375 oven for 20 minutes. Lower temperature to 350 degrees and bake for an additional 30 to 40 minutes, or until lightly browned on top. Let cool for a few minutes to settle before slicing.

 

Ingredients 3

1 single crust pie dough

6 slices of bacon, chopped

2 medium Vidalia onions, sliced thin ( about 3 cups)

3 large eggs, lightly beaten

1/2 cup sour cream

1/2 cup heavy cream

3/4 tsp. salt

1/2 tsp. pepper

2 tsp. fresh chives, chopped

 

Directions

Preheat oven to 350.

Cook bacon til crisp. Transfer to paper towels to drain.

Cook sliced onions in bacon fat  or butter til browned, about 12 minutes.  You want them translucent, tender, clear.. Transfer to plate to cool.

In a medium bowl, whisk eggs, sour cream, heavy cream, salt, pepper and 1 tsp. chives.

Add bacon and onions.

Pour into prepared pie shell and bake til filling is puffed and cracked around the edges and the center is barely jiggly when pie is shaken, 30 - 45 minutes . Let cool 10 minutes, then sprinkle with remaining tsp. of chopped chives

 

 

 

 

 

Oven Baked Pub Fries

 

 

Ingredients

3 large potatos

Cold Water

2 - 3 cups Panko (depending on potato size)

2 - 3 egg whites (potato size and egg size)

Sea Salt

*you can use seasoned salt, garlic powder, ranch, whatever your preference is

 

Cut your potatos using a mandoline, frenchfry cutter, or slice with a knife. An easy way to slice with a knife is slice off one side so it lays flat and you don't have a potato rolling around. Now, make 1/4 inch slices, slicing front to back. You have nice slabs of potatos now, and you are going to do the same to each slab, cut front to back in 1/4 inch slices. Place your sliced potatos in a bowl of cold water for 10 minutes. Grab a baking sheet and coat with cooking spray. In a small bowl add your egg whites and whisk briefly. When time is up for potatos, pour them out on a tea towel to dry . Once you have them dry place in a zip lock bag and pour egg whites over potatos and add your seasoning. Close bag and massage around until egg whites completely cover the potatos. Once your confident potatos are covered either using the same bag or new ziplock add in your panko crumbs and shake shake shake. I used the same bag~less waste, but they may cover more thoroughly in a new ziplock. Placing the panko in first then adding potatos. I was shooting for a lightly crisp fry not super crunchy. Place your fries on a baking sheet and bake at 450* 15 minutes, remove and move around with a spatula gently, place back in oven another 15 minutes. Remove and move around checking for doneness. If cooked time to enjoy. If need extra baking time Let bake 10-15 more minutes. Mine took 30 minutes.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Baked Corn

Ingredients

2 tbsp butter

2 tbsp flour

1 1/4 cup milk

1 tbsp sugar

1 can whole kernel corn

1 can creamed corn

2 eggs

1/4 tsp salt

dash or two of pepper

and a dash of nutmeg powder

 

Directions~Preheat oven 350*

Melt butter in a saucepan over medium high heat and add your flour stirring until lightly browned .  . Add in milk a little at a time, whisking between additions. Once smooth turn heat up and bring to a boil. If you see other recipes on my sight you know this is a Rue. a White sauce. Very important base to many sauces. Keep stirring so not to burn to bottom of pan. I've never had it happen but it probably does to some folks. Once smooth and thickened turn off heat and  Add in corn and stir. Add sugar, salt and pepper, nutmeg.. lastly add your eggs stirring until blended and eggs don't scramble.. Pour into a greased casserole or baking dish 1 1/2 -2 quart dish.. Bake in oven at 350* 25-30 minutes. I love baked corn. And honestly the only thing for me that makes it better... Mayo. Yep I add a dollop of mayo to my serving.

Scalloped Potatoes

Ingredients

3 tbsp butter

2 tbsp flour

1 1/2 tsp salt

1/8 tsp pepper

3 cups milk~whole is best but not necessary

6 medium potatoes

2 tbsp minced onion

Nutmeg just a couple dashes

Directions Preheat oven 350*

Melt butter in a saucepan over medium heat, once butter is melted sprinkle with flour stir into a paste. Your making a rue. Add in 1 cup of milk and whisk raising temperature and whisking constantly until smooth. Add rest of milk and whisk . Add in onion, salt and pepper. and a few dashes of nutmeg. Once sauce is thickened grease a 2 qt casserole and add in your potatoes. Pour sauce over potatoes and bake at 350* 45 minutes to an hour. If you want a real kick, add a few dashes of cayenne.

Spanish Rice

Ingredients

2 lb ground beef, turkey, chicken or pork

3 cups chopped onions

1 cup chopped green pepper

1 tsp salt

1 tsp worcestershire sauce

8 cups cooked rice

2 1/2 soup cans of water

2 tbsp vinegar white or cider

5 cans Campbells tomato soup 

Or homemade

 

 

Directions Preheat oven 350*

Saute onion and peper in a large frying pan, dutch oven, or saucepan until tender. Season with salt and worcestershire and vinegar, add in your ground meat of choice. Cook until almost done. Add in rice, soup, and water. Simmer 10 minutes. Grease 2 quart baking dish or 9 x 12 in cake pan. Pour the rice and meat and soup mixture in dish and bake for 30 - 45 minutes. This is a very simple spanish rice but delicious and holds its own.

Broccoli Salad

Ingredients

1 medium head broccoli, chopped

1 cup chopped celery

3/4 cup green olives

3 hard boiled egges, chopped

1/2 cup chopped onion

3/4 cup miracle whip or mayo

1 tbsp mustard

2 tbsp vinegar white or cider

2 tbsp sugar or honey

When chopping broccoli you can use a food processer or ninja. If using a nice chop florets into even sized pieces. When ready for the stem, peel the stem with a vegetable peeler or paring knife. Now chop the stem up. By far more tender and flavorful. celery, olives and onions are a pretty standard slice and dice. Eggs too. No different than potato salad. In a medium bowl combine mayo or miracle whip, mustard, vinegar, sweetener. Whisk or stir together until smooth and well combined. Add in vegetables and stir, combining together and allow to chill several hours before serving. To make an ultimate broccoli salad, add crumbled cooked bacon, some shredded cheddar cheese, chopped nuts, raisins... Just enjoy and always take a recipe and make it your own.

Antipasto Salad

12 oz spiral pasta or even elbow

1 1/4 cup olives green or black or half of both~yum

1 cup chopped green pepper

1 1/4lb hard salami sliced into strips

1/2 lb cheddar cheese cubed

1/2 lb pepperoni sliced in half

1 red onion slice thinly into rings or half moons

1/3 cup parmesan cheese

1/4 cup chopped fresh parsley

3/4 cup italian dressing~wishbone

Boil water and cook pasta to al dente' drain and cool. In a large boil combine pasta and all ingredients stirring or if your like me use your hands and really get in there and mix together. Refrigerate a few hours or overnight before serving. Toss before serving as well. Refreshes the flavors and seperates the pasta again. Great for a picnic.

Baked Macaroni and Cheese

Ingredients

1 1/2 cup elbow macaroni~Muellers

3 tbsp butter

3 tbsp flour

1/4 tsp salt

1/8 tsp pepper

3 cups milk

16 oz cheese

1/2 tsp ground mustard

*Optional

Cracker crumbs or bread crumbs

A couple dashes freshly ground nutmeg

A dash or two cayenne or chipotle pepper

1 medium onion sliced thinly~Caramelized in olive oil, a little salt, and a tsp of brown sugar.

Directions

Cook pasta according to directions. Boiling salt water for 9-11 minutes (al dente')  Drain,don't rinse.Melt buttr over medium heat. When butter is melted sprinkle with the flour. Whisk or stir together and make a paste. Your making a rue, I've discussed white sauces in previous recipeds. Pour in 1 cup of your milk and whisk constantly, raising temperature until sauce is smooth, add another cup of milk and whisk making sure lumps are gone. Don't worry even when you have that moment this isn't working and want to give up, don't your almost there. Add the rest of the milk and stir until thickened. Lower heat to medium low and add in your salt, pepper, ground mustard, nutmeg if using, onion if  using, and cayenne or chipotle if using. Stir to combine and add cheeses of choice. This time I used half cheddar and half mozzarella. Most of the time its strickly cheddar to appease the other half, but most cheeses are amazing. Swiss to colby and even cream cheese. Stir until well combined. Grease a 2 quart casserole and sprinkle with crumbs, Be it bread crumbs, ritz cracker crumbs, or like I do sometimes, graham cracker crumbs.. Oh yes.. Put macaroni in dish and pour cheese sauce over macaroni and stir gently to get cheese all around the pasta. Top with bread crumbs, cracker crumbs or even no crumbs. Not necessary. Bake at 350* 35-40 minutes. Let cool 10 minutes and serve.
