White Sauces~the key to so many homemade recipes

Thin White Sauce

1 tbsp butter

1 tbsp flour

1 cup milk 1/4 tsp salt

1/8 tsp pepper

 

Medium White Sauce

2 tbsp butter

2 tbsp flour

1 cup milk

1/4 tsp salt

1/8 tsp pepper

Thick White Sauce

4 tbsp butter

4 tbsp flour

1 cup milk

1/4 tsp salt

1/8 tsp pepper

With each of these its really simple and I know to some newbie cooks it may be intimidating but making a white sauce from a rue is actually very easy and hard to mess up. Start by melting your butter in a pan or saucepan. Sprinkle over your flour and create a paste. now slowly add your liquid and whisk , whisk , whisk, away or stir. It will smooth out. I know if you've never done this before your a little like omg lumps. Just keep whisking. and keep your temperature medium high. Once you have this mastered... Any sauce you want to make will be that much better by not using cream of chemical soup.

Pizza Sauce or Spaghetti

9 oz Tomato Paste

2 cups water

1 tbsp onion powder

1 tbsp garlic powder

1 tbsp basil

1 tbsp oregano

1 tbsp sugar

3 tbsp red wine vinegar

1/2 tsp kosher or sea salt

Couple dashes crushed red pepper flakes

1/2 green pepper

1/2 vidalia onion

1/2 small/medium zucchini

1 tsp coconut oil

Directions

In a medium saucepan combine tomato paste and water. Whisk until smooth and add remaining ingredients listed until green pepper, onion, zucchini and oil. Warm sauce until a simmer begins. Simmer a good half hour. Lower heat to low, below a simmer.. And allow to slowly cook down and fully unite flavors. Stir occasionally. Meanwhile. Slice and dice up pepper, onion, and zucchini. Grab a medium frying pan and add in your tsp coconut oil. Olive oil is fine if that is what you have. Place vegetables in fry pan. sprinkle with a tiny bit of sea salt and saute over medium low heat until vegetables are limp. Not soggy just loosened up a bit. Add vegetables into tomoto sauce and continue allowing to cook over low stirring occoasionally. I like a good 3 hours but if you are short on time you can speed things along by microwaving the vegetables 5-6 minutes in the coconut oil and blending the warm sauce and vegetables together with a wand blending stick or in your blender or ninja. If going to blend allow to cool down a bit. Blending hot ingredients is dangerous and likely will end with burns and scoulds. Blending/pureeing is a good idea if the kiddos don't like vegetables.. They will never know! I love how the sweetness comes out of the vegetables and balances out the sauce. Taste your sauce . I didn't need to change a thing. It was spot on for us but if you feel you need a dash of this or that its your recipe now.. Go for it! Worcestershire sauce is one of those ingredients I reach for when something needs just a little something. Although this sauce recipe didn't need anything.
