Sweet and Sour Pork

Ingredients

~Batter

1 egg

1/2 cup flour

1/2 tsp salt

1/4 cup water

1 lb pork shoulder cut into 3/4 inch cubes

~Sauce

1 20 oz. can  pineapple chunks

1 green pepper

1/2 cup vinegar (rice,white or apple cider)

1/4 cup brown sugar

3/4 cup water

1 tbsp molasses

2 tbsp cornstarch mixed with 1/4 cup water

Directions

Mix batter ingredients until well blended. Either stirring or using a blender on low speed. Cut green pepper into squares, add all Sauce ingredients into a medium saucepan, yes pepper and pineapple with juice too. stirring  and bringing to a boil, turn down heat to a simmer. Adding in your cornstarch and water slurry and continue stirring until sauce has thickened and looks silky and shiney. Turn heat to low. In a deep frying pan heat oil to 375* medium high heat. Dip pork cubes in batter and drop into hot oil. Careful not to overcrowd. When pork is brown remove and drain on paper towels.Once all pork is finished cooking add into sauce and stir and heat briefly to a simmer. Now your ready to serve over rice, lo mein noodles, even cooked potatos or mashed. Cauliflower rice seems to be popular, maybe even zucchinni noodles! I love sweet and sour anything. Pork the other white meat!

 

Spicy Slow Cooker Ribs

Ingredients

4-5 lbs baby back , kansas city style, or country ribs

2 cups ketchup

1/2 cup siracha

1 large onion, sliced

1/2 cup packed brown sugar

1/4 cup apple cider vinegar

1 tbsp worcestershire sauce

2 tsp ginger

1 - 2 dashes hot sauce

Directions

Turn slow cooker on low now, ... The reason our slow cookers, or crocks, crack.. Is the shock of cold and hot. indirect heat to direct heat. I will absolutely explain in detail if needed. Lord knows I've gone threw alot of crocks . Anyway lets finish the recipe.

In a bowl mix together all ingredients aside from ribs of course and whisk until smooth. In the slow cooker place the sliced onions. Circles or half moons is fine. All you want is a bit of space between meat and cooker. Pour sauce over the meat and cook on low 6 hours. Never lifting the lid. Don't just don't lift the lid. leave it be for me.. My fiance has horrible kitchen habbits. lifting a pot of what is suppose to be boiling water, lifting the lid on a slow cooker numeruos times. opening the oven to see whats going on.. the grill oh god.. he can grill but it takes and hour longer at least because he thinks he needs to see it all.Oh and pressure cooker... Do not get me started on the re starts... MEN!!! Anyway.. Okay light up the grilll. I love grilling. Remove ribs that should still be holding together to a plate and carry to grill thats heated. you need some grill crazy brown, glaze, sticky stuff going on to eat..  Alright then. Place ribas on grill thats at least at 375* and get brown and carmelily... Get the color get the sticky going on it takes  but a few minutes. Oh yum.. right..

Sweet, Spicy, Mango Pork

5 Boneless Pork chops ~ If you have  bone in thats awesome also

2 tablespoons honey

1 Ripe mango or 1/2 15 oz. can of diced mango and the juice by del monte

1/8 tsp crushed red pepper

1/8 tsp black pepper

1 tsp ground ginger

1 large vidalia onion

1 sweet potato

1 red potato

1 cup sweet spicy siracha sauce

 

Directions

Slow cooker! yea! Easy! Turn slow cooker on low now. Slice vidalia in half then lay flat and slice in think moons. Place onions in slow cooker. I marinate my meat before cooking. I wrote a blog on my site of the power of marinating in probiotic rich dairy. In this case my pork was marinated 24 hours. Place pork on top on the onions. Thinkly slice potatoes so they cook within the same time as onions. Pour sauce over all and honey, red pepper, black pepper, the mango and ginger. Cook on low 4-6 hours depending on the thickness of pork. Mine were thin. So 4 hours was plenty. Tender pork chops just the right spice. Fiance' was very pleased and said Awesome.
